Tofu Scramble

      1. Tofu
      2. Tomato
      3. Broccoli
      4. Zucchini
      5. Spinach
      6. Avocado
      7. Lettuce
      8. Salsa

      1. Begin by chopping up your desired vegetables. Cut the broccoli and zucchini into small pieces. Turn the stove onto medium/low heat, and put a little bit of olive oil into the pan. Throw in the cut broccoli and stir around until they lightly brown. Once they get noticeably softer, throw in the cut zucchini. While those cook, thinly slice up scallions. Once the vegetables begin to brown, throw in the chopped scallions. Once those brown, put them on a paper towel-covered plate. Crumble up tofu with your hands and put it into the pan you used to cook the vegetables. Then with a spatula, crumble up tofu even more, creating a scrambled-egg type consistency. Push the tofu around until it browns and salt and pepper to taste, then throw back in the vegetables. Stir around for a little and then it is good to go! Add some avocado, Trader Joe’s Roasted Tomatillo Salsa, and chopped tomato, and you’re ready to go!
