Tofu Stir Fry

      1. Brown rice
      2. Tofu
      3. Zucchini
      4. Broccoli
      5. Scallions
      6. Corn

      1. Turn the stove onto medium/low heat, and put a little bit of olive oil into the pan. Throw in the cut broccoli and stir around until they lightly brown. The broccoli takes the longest of the vegetables above to soften, so I like to put them in the pan first. Once they get noticeably softer, throw in the cut zucchini and corn. While those cook, thinly slice up scallions. Once the vegetables begin to brown, throw in the chopped scallions. While those are cooking, make rice: any rice you prefer. I personally use Trader Joe’s brown rice that I put into the microwave for three minutes. When the rice is cooking, salt and pepper the veggies to taste. Then, put all the veggies on a paper towel-covered plate. Dice up tofu and put them into the same pan. Once those begin to brown, salt and pepper to taste. Then, put the cooked rice and veggies into the pan with the tofu. By cooking the rice, veggies, and tofu all in the same pan throughout this process, all of the yummy juices will be absorbed. Add a little more pepper and soy sauce if you prefer. I use Kikkoman Gluten Free Soy Sauce. I’ve been told from many sources that it tastes the same as regular soy sauce!
