Tofu Tacos

    1. Peppers
    2. Zucchini
    3. Tofu
    4. Corn
    5. Scallions
    6. Beans
    7. Brown rice
    8. Avocado
    9. Salsa
  2. Instructions
    1. Chop up peppers, zucchini, and corn. Once those are cut, turn the stove onto medium/low heat, and put a little bit of olive oil into the pan. Throw in the cut peppers, zucchini and corn and stir them around until they lightly brown. When they are cooking, thinly chop up scallions. Once the vegetables begin to brown, throw in the chopped scallions. Sprinkle salt and pepper and then put them on a paper towel-covered plate. Dice up tofu and put it into the same pan. Once the tofu begin to brown, salt and pepper to taste. Make any rice you want and any form of beans you prefer. As salsa goes, I recommend Trader Joe’s Roasted Tomatillo Salsa or Pico de Gallo Salsa. Layer the vegetables, tofu, rice, and beans into the lettuce. Make sure to wash the lettuce 🙂Add some salsa and avocado and enjoy!
